Rainbow fruit & yogurt bark

Ingredients

2 cup(s) plain fat free greek yogurt

4 Tbsp , or agave honey

1 tsp vanilla extract

3 cup(s) unsweetened fresh fruit

Directions

Line a large rimmed baking sheet with wax paper or parchment paper.

In a medium bowl, combine yogurt, honey or agave, and vanilla extract. Using a rubber spatula, pour mixture onto center of prepared pan and spread into an even layer, about ΒΌ-inch thick. Decorate with fruit; freeze until firm, a minimum of 3 to 4 hours.

Cut frozen bark into 12 even pieces (if the bark is too hard to cut, let sit for a few minutes until it softens slightly). Keep bark stored in freezer in a sealed container until ready to serve.
